Melon, Mint & Mozzarella Salad
This chilly summer salad is chocked full of melon, mint, mozzarella cheese and more. All it takes is a watermelon, a couple of honeydews, three peaches, some mint leaves, cheese balls, grapes and a bottle of Lemon-Poppy Seed Dressing.
Here’s your shopping list:
3 cups peeled, chopped fresh peachessummer energy saving
1 (8-oz.) tub of fresh small mozzarella cheese balls, cut in half
3 tablespoons chopped basil
3/4 cup of Lemon-Poppy Seed Dressing
4 cups seeded, cubed watermelon
4 cups cubed honeydew melon
2 cups seedless green grapes, cut in half
6 mint leaves
3 easy steps:
1. Toss first 3 ingredients with 1/4 cup Lemon-Poppy Seed Dressing.
2. Layer watermelon, peach mixture, honeydew and grapes in a tall glass bowl. Chill up to 3 hours.
3. Toss with remaining 1/2 cup dressing just before serving. Garnish with mint leaves.
