A spicy way to lower your energy bill

Air conditioning our homes can really take a bite out of our wallets. One way to drive those summer cooling costs down is by preparing meals that don’t require a hot kitchen stove. Here’s a cold salad idea that every one is sure to love.
Nutty Wasabi Cole Slaw
This sweet and spicy take on an old family favorite will give a real kick to summer dining. It’s delicious and easy to prepare.
Here’s your shopping list:
1/2 cup chopped fresh cilantro
1/4 cup chopped green onions
3 tablespoons white vinegar
1 tablespoon sesame oil
2 tablespoons mayonnaise
1 teaspoon sugar
1 teaspoon grated fresh ginger
2 teaspoons wasabi paste
1/2 teaspoon salt
1/2 teaspoon pepper
1 (16-oz.) package shredded coleslaw mix
3/4 cup lightly salted peanuts
3 easy steps:
1. Whisk white vinegar, sesame oil, mayonnaise, ginger, wasabi, sugar, salt and pepper in a large shallow bowl.
2. Add coleslaw mix, green onions and cilantro. Stir to coat. Cover and chill at least an hour.
3. Stir in peanuts just prior to serving.
