Citrus Dijon Salad
This chilly summer salad makes endive lettuce come alive. A dash of Dijon mustard, a pinch of cumin, all crowned with wedges of ruby red grapefruit.
Here’s your shopping list:
1/2 cup extra virgin olive oil
3 tablespoons white wine vinegar
2 tablespoons Dijon mustard
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup walnuts
8 heads Belgian endive
2 red grapefruits, peeled and sectioned
3 easy steps:
1. Place walnuts in a single layer in a shallow microwavable pan. Microwave at high heat for 1 minute.
2. Whisk together the first 6 ingredients.
3. Dispose of outer leaves of the endive. Rinse with cold water, and dab dry. Cut each endive head diagonally into 1/2-inch slices, and place in a serving bowl. Add walnuts and Dijon dressing. Toss to coat. Top with grapefruit. Serve with any remaining dressing.
